In our previous episode, we introduced you to various vegan egg substitutes for baking, and today we will introduce you to brands, such as Bob’s Red Mill Natural Foods, Just Egg, Yumgo, and Atlantic Natural Food.

Founded in 1978 in Milwaukie, Oregon, USA., Bob’s Red Mill (BRM) specializes in grain-based plant foods. The company’s powdered vegan egg is composed of potato starch, tapioca flour, baking soda, and psyllium husks. Recently, Eat Just released its fifth edition of vegan eggs in liquid form made from mung beans. This product has a clean flavor and is described as having a “pillowy, creamy texture,” with enhanced binding and aeration qualities that are ideal for baking.

Compared to conventional eggs that are high in protein and fat, vegan eggs are cholesterol-free, and rich in carbohydrates, protein, and fiber. The challenge in making these products is their amino acid profiles and vitamin B12 limitations. The world’s food research and development institutions still have work to do to overcome those constraints. On the positive side, vegan eggs potentially have high calcium content, and this gives companies the opportunity to develop a more nutritious product. By analyzing the front-of-pack labeling information of 102 vegan egg replacers, the researcher identified key market trends in the vegan egg industry based on the primary claims made about these products. The main trends include health and well-being, convenience, naturalness, and sustainability.

Spiritually, our beloved Supreme Master Ching Hai (vegan) states clearly that eggs have to be excluded from the vegan diet, for eggs contain lives, and can be used as a medium to transfer negative energy.
